The ginger 'root' used for centuries in cooking and for medicinal purposes is actually the rhizome of a perennial creeping plant. It thrives in tropical conditions with heavy rainy seasons and hot dry seasons. The rhizomes are usually harvested when the plant is about 9 months old. Historically, It is believed to have many health benefits, including use as an anti-inflammatory, and has a long tradition of being very effective in alleviating symptoms of gastrointestinal disorders and motion sickness. For example, for nausea, try 'Ginger Tea'. Make this by steeping two or three slices or ¼ - ½ tsp of grated fresh ginger in a cup of hot water and then sip slowly. To make a refreshing drink, add a little honey and the juice of half a lemon.

How to select

When buying ginger, fresh is best! Be sure to avoid ginger with dry, wrinkled, skin, mould or soft spots. Fresh Dole Ginger Tiger is available in New Zealand for most of the year.

How to store

Fresh ginger can be stored unpeeled in the refrigerator for up to three weeks or in the freezer for up to six months.

Preparing Dole Ginger Tiger at home

After peeling, Ginger Tiger can be grated, sliced, minced or chopped, then added to your favourite dishes.

Aromatic, spicy and strong in flavour, ginger can be used in both savoury and sweet recipes. It adds a unique flavor and zest to Asian stir-fries, curries, pickles, chutneys and jams and is an exciting addition to many fruit and vegetable dishes.

Try these simple ideas:

  • Add grated ginger and orange juice to mashed kumara.
  • Add finely chopped ginger to brown sugar and raisins, and use to stuff baked apples.
  • Add freshly chopped ginger to sauteed vegetable.
  • Add freshly grated ginger to carrot or pumpkin soup.
  • Add ground ginger and chopped lime zest to butter, and use top top grilled fish.
  • Add zest to a marinade with chopped fresh ginger, garlic, soy sauce and a little sesame oil.
  • Add grated ginger to fresh fruit and vegetable juices.

For stir-fried or stews, ginger added at the beginning of the cooking process will lend to a subtler flavor, while added near the end it will deliver a stronger taste.
