Banana Griddle Scones

These little banana griddle scones really are simple and quick to make for a family breakfast.

Serves 4

Ingredients

250 g self-raising flour

½ tsp salt

50 g sugar

1 mashed Dole regular banana

250 g sour cream

Method

  1. 1. Sift dry ingredients into a mixing bowl. Add the sour cream and banana, then work in with a fork until the mix comes together to form a dough.
  2. 2. Sprinkle a little flour onto a clean bench or work surface and empty the ball of dough onto it.
  3. 3. Press the mixture down and fold it a few times like you do with play dough to soften it up. Divide into two pieces and pat them into flat circles around half a centimetre thick. Cut each circle into 8 wedges.
  4. 4. Heat a large heavy-based pan to a low heat.
  5. 5. Place 4 of the wedges (or more if you have a big pan) into the hot, dry pan. Cook for 2 - 3 minutes on each side, but keep an eye on them so they don't burn.

Serve hot for breakfast or brunch, with maple syrup, a slice of bacon, and Superfoods fruits: Dole bananas; Dole Tropical Gold pineapple: and Dole paw paw.
