Paradise Plantain Aranitas

Try this delicious recipe for 'Aranitas'- shredded plantain fritters. These fritters are terrific with dips for a snack, or as a side dish to a main course.

Makes approximately 5 fritters


1 Dole Paradise Plantain, peeled and coarsely grated (a cheese grater works well)

2 cloves of garlic (optional)

salt and pepper to taste

cooking oil for frying


  1. Place the grated plantain in salted water and leave to soak for 10 minutes. (The salted water will stop the plantain oxidising and going brown)

  2. Drain and dry with paper towel to get rid of excess water.

  3. Mix the plantain with the minced garlic and add salt and pepper.

  4. Heat the oil in a pan or wok over a medium high heat.

  5. Drop dessert spoonfuls of the plantain mixture into the hot oil and fry until golden (about 2 minutes on each side)

  6. Drain on paper towel and serve with your favorite dipping sauce.
