Something tasty and different to go with any main course. Particularly nice with fish or pork dishes.
Serves 4 - 6
1 kg Dole Paradise Plantain
3 tbsp butter
¼ cup chopped onions
¼ cup chopped, tinned, or bottled peppers or capsicums
2 tbsp flour
1¼ cups evaporated milk
1¼ cups of grated tasty cheddar
salt and pepper to taste
Put the unpeeled Paradise Plantains into a large pot of boiling salted water. Cook for 15 minutes. Drain and leave for a few moments to cool slightly then slit the skins and remove the plantain and place into a mixing bowl.
Crush or mash the plantain to a coarse but even consistency.
Heat the butter in a pan and add the onions and cook for 2 minutes. Then add the peppers or capsicums and cook for a further 2 minutes.
Mix the flour with the evaporated milk and add to the pan with the onions and peppers.
Cook, stirring continuously, until thickened and then add the cheese. Continue to stir until the cheese has melted into the sauce.
Add the crushed plantain and salt and pepper to taste.
Put the mixture into a greased baking dish and bake at 200°C for 25 minutes until golden brown.
