Sautéed Paradise Plantain

These little mouthfuls are delicious served either savoury or sweet. For a savoury snack or side dish drizzle with olive oil, season with salt and pepper and serve hot. Flavoured oils like chilli or lime would work well in place of standard olive oil.

For dessert, dust with cinnamon and icing sugar or maple syrup and serve with ice cream.

Serves 4

Ingredients

3 - 4 ripe, yellow plantain

small knob of butter

1 tbsp cooking oil

Method

1. Peel and slice yellow plantains on an angle about 1.5cm thick.

2. Sauté in a little butter and oil until golden (the oil will stop the butter burning).
