Paradise Plantain recipes

A fresh new taste

There are many ways to enjoy green plantains, which are firm and starchy, much like a potato or kumara. Boiled, mashed, fried like chips or fried really thinly, like crisps. They are amazingly versatile because, as they ripen, they change colour from green to yellow and eventually black. They become sweeter at each stage, so you can choose to use them in both savoury and dessert recipes.

Peeling Plantains





  1. When green, peel them with a vegetable peeler or sharp knife in the same way you peel potatoes.
  2. Or to peel by hand, first cut off the ends.
  3. Run a slit down the length of the plantain with a knife.
  4. Carefully peel the skin sideways in sections from the plantain. The riper the plantain, the easier it is to peel.

Hint – If peeling green Paradise Plantains by hand, soak them in hot water for a few moments before starting.
