Banana Sesame Fritters with Chai Caramel Sauce

Banana and Caramel Sauce the perfect combination

Ingredients

Caramel Sauce

1 cup white sugar

½ cup water

¾ cup cream

1tsp chai spice

Batter

2 Tbsp desiccated coconut

100g rice flour

100g cornflour

4 Tbsp black/white sesame seeds

1tsp sea salt

2 Tbsp white sugar

1 cup water

Dole Bananas

Icing sugar to dust 

Chopped walnuts to garnish (optional)

Method

Preheat fryer 180C

Caramel Sauce 

Put sugar and water in a heavy based saucepan on medium to high heat. Swirl the sugar slightly to incorporate but do not stir, this will cause the mixture to crystalise. Once the caramel starts turning golden around the edges of the pot take it off the heat and give it one last swirl so it is one even colour and slowly add the cream. Caution EXTREMELY HOT. Add the chai spice.

Batter

Add all dry ingredients to a mixing bowl and stir to incorporate evenly. Make a well in the centre and add the water. Whisk to make a smooth batter. Cut banana into quarters and dip into the batter and lower slowly into the oil. Fry until golden and then dust with icing sugar.
