Hawaiian Style Meatballs
Ingredients
- 1½ C jasmine rice
- 300 g beef mince
- 300 g pork mince
- 1 clove of garlic crushed
- 1 onion finely chopped
- 1 tsp soy sauce
- 1 tsp worcestershire sauce
- ½ C panko breadcrumbs
- 1 egg beaten
- 1 tbsp olive oil
- 1 red onion sliced
- 1 red capsicum sliced
- 1 green capsicum sliced
- 1 zucchini sliced into half-moons
- ½ fresh pineapple chopped
- 2 tbsp soy sauce
- 2 tbsp tomato sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 3 tsp cornflour mixed with 2 tbsp water
- 1 C chicken stock
- 3 spring onions chopped
Method
Step 1
Rinse the rice and cook according to packet instructions.
Step 2
In a large bowl, mix the mince, garlic, onion, soy sauce, Worcestershire sauce, breadcrumbs, and egg.
Step 3
Roll into large walnuts sized meatballs.
Step 4
Heat a large frying pan over medium heat and cook the meatballs for 6–8 minutes until browned all over and cooked through. Remove from the pan and set aside.
Step 5
In the same pan, heat a film of oil over medium heat.
Step 6
Add the red onion, capsicum and zucchini and cook for 3–4 minutes until starting to soften.
Step 7
Add the pineapple chunks.
Step 8
Stir in the soy sauce, tomato sauce, brown sugar, vinegar, and stock. Turn the vegetables to coat in the sauce.
Step 9
Simmer for 5 minutes.
Step 10
Stir in the cornflour mixture and cook for another 2 minutes until the sauce thickens.
Step 11
Add the meatballs back to the pan and cook for 2–3 minutes until heated through and coated in the sauce.
Step 12
Serve in shallow bowls with rice. Garnish with chopped spring onions.
