Mini Passionfruit and Caramelised Banana Meringues

These little desserts are sooo delish and seriously easy to make. The caramelised Bobby bananas really elevate this dish.

Ingredients

6 mini meringues 

1 cup of cream 

1 teaspoon of vanilla essence 

2 Bobby bananas - sliced 

1/2 cup of brown sugar 

6 tablespoons of passion fruit sauce 

1 tablespoon of butter 

Fresh mint - garnish 

 

Method

Grab a large bowl and add cream and vanilla essence. Whip until you reach just firm peaks. 

Coat the Bobby banana slices in brown sugar. Place a pan over a medium to high heat and add butter. Once melted, add the brown sugar coated bananas and cook until golden brown and caramelised. 

Let’s assemble! Grab a mini meringue, top with a dollop of vanilla cream, caramelised bananas, drizzle over passion fruit sauce and garnish with mint.
