Seeded Banana Loaf with Salted Honey Butter

A delicious and heathy update on a classic by our friend Kitty – a generous slather of this salted honey butter takes this to another level!

Ingredients

3 ripe Dole bananas - mashed 

3/4 cup of brown sugar 

2 T of honey 

1.5 cups of flour 

2 tsp of baking soda

1/4 cup melted butter 

1 egg 

1/4 cup sunflower seeds 

1/4 cup chia seeds 

1/4 cup pumpkin seeds 

Pinch of salt 

 

Method

1. Preheat oven to 160 degrees. 

2. Place a sieve over a large bowl. Add flour and baking soda then sieve through. Add brown sugar, melted butter, honey, seeds and salt then stir. 

3. Grab another bowl and add bananas then mash using a fork. Add the egg and mix into the bananas. Pour the wet ingredients into the dry ingredients then stir until well combined. 

4. Pour batter into a greased loaf pan top with a slice of banana and sesame seeds, then pop into the oven for about 45 minutes until golden on top. 

5. If you aren’t sure if it’s cooked, poke a skewer into the centre and if it comes out dry it’s done! 

6. Place a knob of room temp butter into a ramekin, top with runny honey and salt then serve with the warm banana bread.
